The Session:

This is a special 2-day, 1-night session that focuses on the cacao plant or tree, the fruit or pod, its sweet pulp, its beautiful flowers, it’s ecosystem, and its regeneration.

We travel to Oaxaca’s coast by road to visit a beautiful and lush cacao food forest in the middle of an local community. From there we will visit the farmers’ workshop facility where they will make fresh chocolate from the cacao and of course, you will be able to eat it. From there we will spend a night on a Oaxacan beach in local, boutique accommodation. The following day we will have a chance for a morning swim and breakfast before returning to Oaxaca City.

The Session includes:

  • Private transportation and all meals
  • Cacao food forest session & chocolate workshop
  • All cacao, chocolate, drink, seed, and pulp tastings
  • Spanish-English translation
  • 1-night accomodation in a boutique accomodation

Key Details:

When: October-June (Upon Request)

Where: We will travel from Oaxaca City to Oaxaca state’s coastal region, stopping in a jungle food forest, a chocolate workshop nearby, and a night/morning on the beach before returning to Oaxaca City.

How: Driving & Walking. There are 2 classrooms we visit. We will be driving on a fairly windy highway. Many people get queezy or sick, so please prepare yourself. Please dress for impending weather. Bring a hat or sunglasses, jungle and beach clothing, and be prepared to hike and learn.

Important: The highway from Oaxaca City to the cacao food forest can be difficult for those prone to car sickness. We can extend the trip by a night (for a fee) in order to accomodate this, or guests can be either picked up or dropped off (or both) at the airport in either Huatulco or Puerto Escondido.

Dietary Restrictions: Oaxaca is a very difficult place for people with severe allergies or dietary restrictions. Please advise us in advance of any restrictions and we will do our best to accommodate our guests.

Medical Issues: We do not have adequate medical training. If you have a medical condition or carry medicines/tools with you, please advise us in advance. We will do our best to help in whatever way we can, but we are not responsible for your health. Know your body. Know your requirements. Please, inform us of your issues.

Price (per person): $5500MXN (includes cacao food forest visit & discussion, chocolate workshop session, four meals, 1-night double occupancy accommodation, all chocolate drinks, seed, chocolate, and pulp tastings)

*Single occupancy is 6000MXN per person

Minimum 2 people per session

Payment: All reservations incur a 50% deposit. We can meet you in Oaxaca City for the deposit upon confirmation of reservation. The remaining payment due is collected at the beginning of the session. We only accept cash in Mexican pesos.

The Spirits of Agave: Fermented Drinks Session

In our Oaxacan market classroom, guests are invited to taste the pre-Hispanic flavours of the agave (or maguey) plant. We journey into the world of myth and into the past through this tasting that includes three unique, fermented ceremonial agave drinks. Join us and discover how these ancient drinks have changed over time, have informed the indigenous character of Mexican people, and how these delicious drinks are informed by and inform understandings of time, the moon, ceremony, blood, milk, gods, sacrifice, and elderhood.

There are hundreds of varieties of chocolate bever There are hundreds of varieties of chocolate beverages in Oaxaca. First of all, chocolate started as a beverage and now it has diversified widely, in each case using the ingredients that are known in specific regions. Like this variation of the chocolateatole that incorporates achiote, a red coloring seed, into the drink.

El pulque es una bebida fermentada de la sabia del El pulque es una bebida fermentada de la sabia del maguey. Se podría decir que es una cerveza no carbonatada (sin gas) proveniente del maguey. Su proceso de producción es radicalmente diferente al del mezcal. Sólo algunas plantas de agave son buenas para su elaboración.

Pulque is a fermented beverage from the sap of the agave plant. You could say that pulque is a non carbonated beer derived from the agave. Its process of production is radically different form that of the mezcal. Only certain agaves are good for its production.
